Isn’t this cooler weather we have been enjoying just wonderful? It’s not quite cool enough for a big pot of chili, but a good ole BBQ sandwich is good any time of year. The crock pot really does it’s magic with the pork loin, it comes out so moist and tender you hardly have to chew it. The best part of this recipe though is the sauce…the coca-cola really sets it apart from other BBQ sauce recipes I have.
My Aunt passed her sauce recipe down to me, she used coca-cola in many of her dishes she made. My Grandmother didn’t cook with or drink coca-cola, she used it for cleaning stains on laundry and polishing her silver and as kids we only got to drink a soda as a reward for doing something helpful.

Crock Pot Pork Tenderloin with Coca-Cola BBQ Sauce
2 lb. boneless pork loin
my all purpose seasoning (2 T. smoked paprika, 1 T. brown sugar, 1 T. salt, 1 T. Adobo seasoning, 1 tsp. pepper…combine and store in an airtight container)
For the sauce:
3/4 C. ketchup
3/4 C. coca-cola
2 T. brown sugar, packed
1 T. cider vinegar
1 T. worcestershire sauce
1 tsp. garlic powder
1/4 tsp. paprika (I used smoked paprika)
hot sauce to taste
Coat the pork loin generously with the all purpose seasoning (no liquid). Place in your crock pot and cook on high for 4 hours. Meanwhile, in a small pot, combine the ingredients for the sauce. Heat to a boil and then reduce the heat to med. low and cook until it has thickened a little, approx. 10-12 minutes, stirring often.
Once the pork loin is done, remove it from the crock pot and shred it using 2 forks. Place in a bowl and pour the warm sauce over it, tossing to coat well, just before serving. Note: The sauce will keep up to a month in the refrigerator if making in a larger batch.
