As a child, one of my fondest memories is that of me helping my Grandmothers when they would bake cakes. They baked all kinds of cake but my favorite was always a coconut cake. Each of them had their own recipe and both were equally as good. After they would put the batter in the pans to bake, I would be given the beaters to lick the leftover cake batter off of. Even though I am 50 years old, I still like to lick the beaters after making a cake, just as I did with this one. I know, they say it is not good for you to do these days, but it’s the inner child in me that can not resist.

This cake is so moist and delicious. The buttercream frosting is perfect for this cake, but you can always use cool whip as some prefer that over the frosting.
