When I was growing up one of my favorite meals to share with my Grandparents was breakfast. There would be a table full of hot biscuits, sawmill gravy, eggs, grits, fried potatoes and strick-o-lean. Even though I still cook a big breakfast like that, usually on the weekends, I like to make breakfast pies and casseroles as well. This is one of my families favorites around here. I only used bacon this time but I have made it many times before using sausage, ham or a combination of all three. Any way you decide to make it, it’s just delicious.

Farmers Breakfast Pie
1, 9” pie shell
8 slices of bacon, cooked and crumbled
1 1/2 C. shredded cheddar cheese
4 large eggs
1 C. half and half
1/3 C. diced red bell pepper (you could use green or a combination)
2 green onions, chopped
1/8 tsp. ground yellow mustard
1/4 tsp. pepper
good pinch of salt
Place the pie shell in a 350 degree oven and partially bake for 12 minutes. Remove and spread the crumbled bacon in the bottom of the pie. Top the bacon with the cheese, set aside. In a bowl whisk together the eggs and half and half, add all remaining ingredients and mix well. Pour over the cheese and return to the oven for 45 minutes or until the center is set. Remove and let rest for 5 minutes before slicing. Note: If the edges of the crust begin to get to brown, cover them with a little tinfoil.
