Crock Pot BBQ Beef Roast


Sometimes there is just nothing better than a good ole BBQ sandwich. I grew up with BBQ being a staple at family reunions and church gatherings. Whether is was beef, pork or chicken we just loved us some down home, finger lickin’ good BBQ. Mama would always pile it high on a bun, top it with some coleslaw and a little dab of Nannies chow chow and serve it up with a side of homemade fries. Crock Pot BBQ Beef Roast

2 – 2 1/2 lb. beef chuck roast

1/4 C. BBQ sauce

1/4 C. ketchup

2 T. light brown sugar

1/4 C. apple cider vinegar

1/4 tsp. dry mustard

1 T. Worcestershire sauce

1/4 tsp. chili powder

Place the roast in a 6 quart crock pot. Whisk together the remaining ingredients and pour over the roast. Cook on low for 6 hours. Remove the roast and shred with two forks (it just falls apart), place in a serving dish and ladle some of the juice over the top before serving.
