Summer salads are a perfect meal this time of year. This broccoli fruit salad is not only refreshing and filling it is also good to eat as a “pick me up” when your feeling tired.
When I was undergoing chemo and radiation a few years back, I would make this salad to eat on during the week to help give me strength to move on to the next treatment. It worked, and I continue to enjoy eating this one often because it has cancer fighting ingredients in it. With family reunions underway for many of us, try taking this salad to one of yours as I plan to make it for our family reunion next month.

Broccoli and Fruit Salad
3 strips of bacon, cooked and crumbled
1 med. head of broccoli, florets removed
1 large sweet apple, chopped
1/2 C. sweet onion, chopped
11 oz. can mandarin oranges, drained
1/2 C. raisins
1/3 C. shredded cheddar cheese
1/2 C. mayo
1 T. sugar
1/2 T. rice vinegar
In a bowl combine the first 7 ingredients. Whisk together the mayo, sugar and vinegar and pour over the broccoli mixture. Toss to coat well. Cover and place in the fridge for 1 hour before serving.
