Summer Cabbage Salad, Approximately 3 servings.

With the hot days of Summer upon us, it is nice to fix something for lunch or supper that you don’t have to heat up the stove or oven for. Summer salads are wonderful this time of year whether it be with pasta, potatoes, salad greens or with cabbage as this one is. This cabbage salad is very light and refreshing and is great to take for family reunions, just make sure to keep it chilled since there is mayo in it.

Summer Cabbage Salad

(Approximately 3 servings)

2 C. shredded cabbage

1/2 C. zucchini (sliced in thin 1” strips)

1 green onion, chopped

1 small apple, quartered and thinly sliced

1/2 C. shredded carrots

1/2 C. dried cranberries

1/4 C. mayo

1 tsp. rice vinegar or white vinegar

1 T. sugar

pinch of salt

Combine the first 6 ingredients in a bowl. Whisk together the remaining ingredients and pour over the salad. Stir to combine well and place in the fridge for 30 minutes before serving.
