With Memorial Day right around the corner many of you may be planning on some sort of salad for your cookout. I always like to have potato salad and a tossed salad for our cookout, so I thought I would share my favorite homemade salad dressing with you.
There is a BBQ restaurant in the town where I was raised that is famous for it’s 1000 Island Dressing, and I spent many many years trying to duplicate it and this is about as close as it gets to their original recipe. It’s sweet with just a little tang to it and when I get a hankering for one of their hickory salads, I just whip this dressing up and it takes me right back home again.

Delicious 1000 Island Dressing (about 2 cups)
3 T. grated sweet onion
2 T. grated green bell pepper
1 1/2 C. mayo
1/2 C. chili sauce
3/4 tsp. prepared horseradish
1 T. sweet pickle relish
1 1/2 T. minced dill pickles
1 tsp. dill pickle juice
1 tsp. worcestershire sauce
In a bowl whisk together all the ingredients. Cover and put in the fridge for 1 hour before serving over your favorite salad ingredients.
