One of my favorite comfort foods is meatloaf and this one is an old family recipe that I have tweaked over the years. It is moist and delicious and makes the best meatloaf sandwiches the next day. I’ve made many versions of meatloaf over the years but when I start missing my family this one always takes me back home.

Corn Flake Meatloaf

1 1/2 lb. ground beef

1/2 lb. ground pork

1/4 C. diced celery

1/2 C. chopped onion

1 tsp. garlic powder

1/2 tsp. smoked paprika

1/2 tsp. chili powder

1/4 tsp. salt

2 tsp.. soy sauce

2 tsp. worcestershire sauce

1/4 C. ketchup

1 large egg

1 1/2 C. crushed corn flakes

Topping

1/2 C. ketchup

2 T. brown sugar

1 T. whole grain mustard

In a bowl, combine all the meatloaf ingredients, I use my hands to combine it all. Once combined place it in a baking dish and pat out to 2” thickness (I line my pan with tinfoil for easier clean up). Bake, uncovered, in a 375 degree oven for 45 minutes. Combine the topping ingredients, set aside. After 45 minutes remove the meatloaf and spoon the topping over the top of the meatloaf. Return to the oven for 15 minutes. Allow to rest for 5 minutes before slicing.
