When the weather begins to warm up I immediately start thinking about salads. This one is so easy and refreshing and goes with just about anything you are cooking up for supper. I always make enough so that the leftovers can be eaten for lunch the following day. Cucumber salad is one of my Daddy’s favorites and this is how he taught me to make it.

Cucumber Salad

1 med. cucumber, peeled and thinly sliced

1 small white or red onion, thinly sliced

1 med. tomato, chopped

1/2 C. white distilled vinegar

1/4 C. sugar

3/4 C. water

pinch of salt

1/4 tsp. dill weed, optional

Put the cucumber, onion and tomatoes in a bowl. Whisk together the remaining ingredients and pour in the bowl. Give a good toss, cover and place in the fridge for 3 to 4 hours before serving.
