Appalachian Recipes by Janet Crow

This recipe takes me back to my Grandmothers kitchen table when all the family would get together. Ham salad could always be found in the mix and never lasted long so you had to hurry up and get in line to get a helping of it. Some would put it on loaf bread while others, like myself, just like to spread it on soda crackers. I always make this for family holiday gatherings and it is just as popular now as it was back then.

Ham Salad

12 oz. diced ham

2 T. sweet onion

2 T. diced celery

2 T. sweet pickle relish

4 T. mayo

Place the ham in a food processor and pulse just enough to break it down a little. Remove to a bowl and add in the remaining ingredients. Stir well to combine and place in the fridge for at least 2 hours before serving. Serve with crackers or as a sandwich.
