Janet’s Appalachian Recipes

Crow

-As much as I love Southern cookin’ I do change up my menu to often include Mexican food which my husband loves. This is one I came up with a few years back, trying to fix something besides tacos and enchiladas and it quickly became a regular on our supper table.

Mexican food was not something that I grew up with other than tacos, but I wanted to learn to turn those tacos into casseroles (I happen to adore casseroles) and explore other ways to prepare Mexican food to suit my budget and my families taste. That’s how this recipe came about, easy and budget friendly.

1 15.5 oz. can Chili beans

1 pkg. Fritos chips

8 oz. shredded Colby jack cheese

Brown ground beef, drain and add in onions and sauté till tender. Add in taco seasoning and diced tomatoes with juice. Stir to combine and then add the chili beans and cook to heat through. Remove from heat and in a med. size casserole dish place a layer of hand crushed Fritos, then a layer of the meat filling and top with some cheese, repeat a second time ending with a final layer of Fritos on top (save a little cheese).
